PYMENT: All honey wines with fruit are melomels, but not all honey wines with fruit are pyments. A "pyment" refers only to a honey wine that involves grapes, or a grape wine that includes honey. The grape wine doesn't even have to involve honey in its fermentation process-- it can be sweetened with honey after the wine yeast runs out of sugar to convert to alcohol, or it can even be a mixture of finished honey wine and grape wine. It can be red or white, as the type of grape wine doesn't matter-- if it has honey and grape involved, it's a pyment!
The scent: a melange of sweet wildflower honey, Merlot, a lightly oaked Cabernet Sauvignon, and crushed red grapes.
